1. Whisk the vinegar and mustard in a medium bowl.

2. Using a balloon whisk, gradually whisk in the oil to make a thick, smooth vinaigrette. Season with salt and pepper.

Perfect vinaigrette

If you follow the recipe exactly, mixing the mustard and vinegar first, then adding the oil and whisking with a balloon whisk, you will achieve a thick emulsion that will not separate, even when stored.
