Minted Grilled Lamb Chops

Add port, olive oil, and orange juice to a shallow baking dish, large enough to place all 8 chops flat. Chop garlic and mint leaves and add to dish. Add cumin and mix all ingredients. Add lamb chops one at a time, rubbing mixture into the meat on both sides. Sprinkle with salt and turns of the pepper mill. Cover and let sit 2 hours or refrigerate overnight. Preheat gas grill on high for 10 minutes. Add chops and turn heat down to medium. After 3 minutes, rotate chops 25 degrees. After another 2 minutes, turn chops over. Grill an additional 4-5 minutes and remove, serving immediately. Keep in mind, heat varies from grill to grill. Cook the lamb chops to medium rare as you would a small steak. I usually gauge by touch, a soft feel to the chop indicates a good medium rare.
